Best Banana Bread....EVER!!



This is the best banana bread ever! I have tried many different recipes, and this is by far, the best ever! I made this oat streusel topping and it was just wonderful. For those of you, who prefer nuts in your banana bread.. sorry. No nuts in this one. Although, if you really wanted them, you could definitely add them.


Ingredients for bread
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs, beaten
1-1/2 cups mashed banana (5 medium or 2 large)
1 cup sugar
1/2 cup melted butter or margarine


Streusel Oat Topping

4 heaping tablespoons of flour
3 heaping tablespoons of oats
1/4 cup packed brown sugar
1/4 cup cold butter
Directions for steusel.
Combine all ingredients together with a fork, or your fingertips. Place in fridge to keep cold until ready to sprinkle over banana bread.

Directions for bread.

Preheat oven to 350 degrees F. Grease bottom and 1/2 inch up the sides of one 9x5x3-inch pan; set aside.


In a large bowl combine flour, baking powder, baking soda, salt, cinnamon. Make a well in center of flour mixture; set aside.

In a medium bowl combine eggs, banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared pan.

Sprinkle streusel oat topping over top of batter.

Bake for 55 to 60 minutes, or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing. Or... let cool just enough to slice and and butter...mmmm then, hide the rest of the bread so you don't have to share.
